Prairie Fire, the newest member to our jam/jelly family, made to salute the state of Oklahoma Centennial. A delightful blend of five berries and jalapeno peppers. Use it to make sauces, glaze meats or bake in a dessert bar. Of course, delicious over cream cheese.

One fall we had an over-abundance of fresh pears from not only our own trees, but also the especially prolific trees from one mother-in-law. After just so many loaves of pear breads, you start experimenting…so we threw in a handful of toasted pecans into a pot of simmering fresh pears and made a lovely golden jam. You can never go wrong with this at your breakfast table. Sweet chunks of pears and the “earthy-ness” of fresh toasted pecans will make it a household favorite or thoughtful gift (an excellent pear jam is hard to find!). We LOVE it over ice cream, pancakes and waffles!

This is the best-selling member of our jelly/jam family. The recipe was perfected in time for Valentine’s Day ’99, thus its name also denotes its taste temperature. Made with fresh jalapeno, habanero, Serrano and sweet bell peppers, Red Hot Lover is sweet, tart and has a spicy “bite”. It is a must for the next time you prepare chicken or beef fajitas (glaze the meat while grilling or do like we do: just heap a tablespoon on the tortilla!), use it as a sauce for Chinese egg rolls, pour it over cream cheese and serve as a spread with crackers, wrap and bake it with brie cheese in phyllo dough or puff pastry. It is a bright red jam with chunks of pepper…keep it in your pantry at all times!

It was a good day the day we put these two tastes together. We can only describe the result as delicious. Actual lavender blossoms are cooked with strawberries for a truely unique combination which will make a hot biscuit or scone sing! We use it in catering as an excellent complement to brie cheese…many a happy bride have commissioned this to be the filling in their lemon wedding cakes. This is a thick ruby-red jam with big chunks of strawberries…you’ll be able to see, and taste, the small flecks of lavender blossoms.
