American Prickly Pear Cactus has been a part of the cuisine of every culture that has inhabited the Southwest Sonoran Desert. Rich and nutritious; packed with health giving vitamins and minerals, cactus pads have sustained the indigenous people for centuries. We have made this salsa with a wonderful tart-base of tomatillos, jalapenos, garlic and spices.
We then added a generous helping of prickly pear cactus. No cactus stickers! Just the tender flesh. It adds a wonderful smoothness and makes this salsa a fantastic accompaniment to chips, chicken, chowder or pork chops. A great all around eating salsa.
